Bon Iver. Arcade Fire. Bombay Bicycle Club. “This could be my playlist,” my bar bloke illuminated as we juiced up on the real underground business: good booze. It’s not just his taste in music that he shares with head bartender (and bar owner) Doug Laming. There’s also a thirst for creativity. Our photo of Laming’s Jellied G&T ($11) went viral while we were still in the bar. Others saw the image, but we got the real treat: to savour the shot. Longer gin – like Martini Magic ($21) – is also on offer on this inventive cocktail list. Laming sure gets his spirits, but has also put together a fine collection of wines and beers. And how good is the food? We reckon Rabbit Hole dishes up some über good grub, including one of the best burgers in Sydney.
