A predictable place to start drinking in a Spanish bar de tapas might be with an aperitivo, such as a Pisco Sour. Or if you have the taste for it, like me, a good Spanish start, might be sherry. The most interesting (on an incredible list) is the rare, unique and unexplained Equipo Navazos La Bota No34 Palo Cortado Jerez, Spain ($24/glass; $198/bottle) – though it’s not always in my price bracket. So as much as I hate to compromise, I’ve found one: Rebujito ($16) Palo Cortado, lemon, soda. Served from a pottery jug, it’s the ultimate lemonade for grown-ups! Or broaden your knowledge with a sherry flight. The rest of the wine list is extensive: blanco, rosado, tinto, dulce. If you want to go all the way, go for large; wine tastes better from magnums – and there’s a huge range.
