When a redhead like me walks into a gold rush, all of a sudden my hair colour becomes insignificant. Do you know your Australian history? The former Bullion Office of Sydney’s Mint was established in 1854 in response to vast quantities of gold circulating during the gold rushes. And now until the end of November – from 3pm to 9pm Wednesdays to Fridays – it’s a bar. A bar with double pop: it’s not only a pop-up, but it’s serving my favourite bubbles – Champagne. There’s simpatico in the choice of Veuve Clicquot and location, as the Veuve Clicquot brand colour is a glorious gold. Bullion Bar includes indoor and outdoor areas, and will serve a selection of Veuve Clicquot by the glass ($22 – $25), two glasses ($40 – $45) or bottle, and a range of wine, beer and soft drinks.
